I am currently in an interesting situation. Septic system, well water. This means no disposal -- so we have a recycling bag, a trash can, and a compost bin (usually a cardboard milk carton).
We also have no dishwasher, so all washing is done by hand, and there is a drying rack. Every evening before dinner I put the dry dishes away, wash whatever is in the sink and put them up to dry, and prep for dinner. ;)
[this is very different from our previous location, where we had company-paid-for biweekly cleaning and our house back in VA where we had a dishwasher and disposal.]
I should also probably mention that the dishes get washed once to twice a day, as the kids need the bottles to be clean.
Dishes are almost never left in the sink overnight. I absolutely believe the heart of a clean house is the kitchen, and the heart of a clean kitchen is the sink. Everything else emanates from there.
Keeping the dishes clean-as-you-go keeps me from falling behind utterly in housework.
It's also way easier to spend 5 minutes here and there (as the dishes are used) cleaning dishes then it is to spend 30-40 minutes cleaning dishes. Even a big nighttime cooking only usually takes about 10 minutes tops to clean up that way.
